Plotting it out in Excel, it looks like the curve on the right:
I would input the values given and leave some columns blank in the area where you would want the most resolution, which is presumably in the normal operating range, then just add values that make it a smooth curve. Andrew
I excluded the 350°F temperature cell, and included the 198°F & 213°F cells. I also added this sensor calibration data to post #1 of this forum thread.

230°F = 41Ω
240°F = 34Ω
260°F = 27Ω
280°F = 19Ω
315°F = 14Ω (Left)
