As mentioned, check the mixture screws. Check for a vacuum leak. Check the timing. (Tunnel rams like a lot of initial timing, like 16-18+ at idle.) Make sure the carbs are ok with good gaskets and all the bowl screws tight. Is this tunnel ram setup new or used?

Idle mixture screws 1 turn out and 1 1/2 out no difference.

Check for holes drilled in the throttle plates. (Shouldn't be any.) Check that the secondary butterflies are almost closed at idle. (Back out the sec adjustment screw till the butterflies seat, then turn them in 1/8 turn.) Can you measure the air bleed sizes with a number drill set? (Using the shank of the drill as a pin gage, not the cutting end.) Sometimes used carbs can be a gamble if someone "modified" them before you got them.
