Can I remove the orange/red wire from the oil pressure switch, to see if that is causing any type of rev limit? Thanks.

Yes. According to section 9.13, page 19/20, it's an optional feature:

Engine was limiting to 2500 RPM, in park & in gear. Removed the orange/red wire from oil pressure switch. Engine now pulls hard through the entire rpm range.
Found that incorrect oil pressure switch was on engine. Oil "light" switch (on/off) was replaced with oil "gauge" switch (variable). Engines with oil gauges cannot use this feature.
    Thanks.
